Nourishing the Body: Food as a Form of Self-Love

Love is found in plants, and if you truly love yourself, you should definitely be eating more of them! 🌿✨ Our bodies thrive when we give them the right fuel—foods that have a great return on ingestion. That means what you put inside your body determines your mood, energy level, ability to rest, detoxification, and mental clarity. So why not choose foods that support you in living your best, most vibrant life?

One of my absolute favorite recipes—shared with me by a dear friend who is a strong advocate for balanced, natural eating—is the Buddha Bowl. Let me tell you, I LOVE this recipe because it’s simple, nourishing, and perfect for meal prep. Plus, it’s a delicious way to pack in your servings of vegetables, legumes, and whole grains while keeping your taste buds happy.

Why You Should Be Eating More Veggies, Legumes, and Whole Grains

Studies have proven that a plant-based diet supports longevity and enhances quality of life. When you consistently eat foods that are rich in fiber, antioxidants, and essential nutrients, you’re giving your body the tools it needs to thrive, heal, and function optimally. Eating more plants isn’t about restriction—it’s about abundance, vibrancy, and feeling amazing from the inside out!

And the best part? This recipe is completely customizable! Swap out the veggies, grains, or legumes for what you have on hand or what you love most. The goal is to nourish your body with wholesome, plant-based goodness.

The Buddha Bowl Recipe

Ingredients:

– 1 large sweet potato, cubed

– Extra-virgin olive oil, for drizzling

– Sea salt and freshly ground black pepper

– 1 watermelon radish or 2 red radishes

– 2 medium carrots

– 1 cup shredded red cabbage

– Lemon wedge, for squeezing

– 8 kale leaves, chopped

– 2 cups cooked brown rice or quinoa

– 1 cup cooked chickpeas or cooked lentils

– Âľ cup sauerkraut or other fermented veggie

– 2 tablespoons sesame seeds or hemp seeds

– Microgreens (optional)

– Turmeric Tahini Sauce, for serving

Directions:

1. Preheat oven to 400°F and line a large baking sheet with parchment paper.

2. Toss the sweet potatoes with olive oil, salt, and pepper. Spread them evenly on the baking sheet and roast for 20 minutes, or until golden brown.

3. While the potatoes are roasting, thinly slice the radish into rounds (use a mandoline if available). Use a vegetable peeler to peel the carrots into ribbons.

4. Toss the radish slices, carrot ribbons, and shredded cabbage with a squeeze of fresh lemon juice. Set aside.

5. Assemble your Buddha Bowl: Layer the chopped kale, cooked rice or quinoa, roasted sweet potatoes, chickpeas or lentils, and fermented veggies in a bowl.

6. Sprinkle with sesame seeds or hemp seeds and top with microgreena if using.

7. Drizzle with Turmeric Tahini Sauce and enjoy!
